Rosales celebrates 3rd ‘Tinapa Festival’

ROSALES- “Tinapa” or smoked-fish took the centerstage once again in the afternoon of June 11 when the municipal government here headed by Mayor Susan P. Casareno, in coordination with SM City Rosales, staged the 3rd Tinapa Festival at the mall’s parking lot.
It was an afternoon of fun and delight as townspeople and guests drove in hordes to the festival site.
Before the opening of the festival, the townspeople were entertained by the music from drum and lyre corps followed by the performance of the winner of the street dancing contest, the Rosales Gay Association.
The street dance depicted the preparation and cooking of tinapa, a primary industry of this town particularly Carmen East and Carmen West villages.
In a short program, Mayor Casareno thanked SM City Rosales for the partnership in staging the annual Tinapa Festival even as she said that “tinapa” is famous not only in the town but in Pangasinan and its neighboring provinces.
The “tinapa” industry has been a livelihood endeavor of the people here especially in Carmen West village since 50 years ago. It has been passed from generations to generations and out of it, many successful individuals came from the families that engaged in the said industry.
Mall Manager Catherine Garcia, on her part, welcomed the townspeople and guests  and assured them continuous  partnership in the coming years.

Mayor Casareno was joined by Vice Mayor Harry Bernabe when the “tinapa sa kawa” was lighted where “tinapa” was cooked for the “boodle fight”.
The townspeople and guests partook the cooked “tinapa” that were laid on the long table with steamed rice and “itlog na maalat” (salted eggs).
Highlighting the festival was a cooking contest on “101 Ways on How to Cook Tinapa” where 22 new recipes were cooked by 11 participants.
Fried “tinapa” dipped into slices of tomatoes, a favorite viand for breakfast, was given new twist in food preparation.
Among the entry recipes that were cooked were:  tinapa sisig with malunggay, dinakdakang tinapa, ampalaya con tinapa, tinapa macaroni, cheesy tinapa roll, curry tinapa balls, tina-ros cheesecake, tinapa rice, tinapa ala seafood, tinapa patty, tinapa dynamite, seafood tinapa with pasta and tinapa omelette ala pizza.
The recipes that got the nods of the judges were: First Prize- Tina-Ros Cheesecake (P10,000.00), 2nd Prize- Tinapa Dinakdakan (P7,500.00), 3rd Prize- Tinapa Rice (P5,000.00) and 4th Prize- Cheesy Tinapa Roll (P2,500.00).
The non-winners received P1,000.00 each as consolation prize
